How to make fluffy pancakes for breakfast!

I made these today. For lunch. I do what I want. I'm not going to let some archaic rules about which calories you can and cannot eat at certain times of day keep me down. I'm out of control. You can't stop me. Next thing you know I'm going to be eating sandwiches for breakfast and sleeping in the afternoon. Join with me my brothers and sisters! Let us begin the revolution!

What? It's already begun? Breakfast for lunch is a thing? Well, what about breakfast for lunch AND dinner? Because these pancakes are so good my kids wanted to eat them for dinner again. And I let them. Because truthfully, they couldn't be easier to make. And also because they are delicious. And fluffy. And I like that.


Fluffy American Style Pancakes

Ingredients (10-12 pancakes)
  • 1 cup flour
  • 3/4 teaspoon salt
  • 2 teaspoons baking powder
  • 1/4 cup oil
  • 1 egg
  • 1 cup milk
Instructions
Mix flour, salt, and baking powder in a medium bowl with a whisk.
Add oil, egg, and half of the milk and mix until combined.
Add final 1/2 cup of milk and stir gently so it doesn't slosh all over the place.
Let the mixture sit while pan or griddle heats. This 2-3 minutes of sit time is essential for the baking powder to start working - giving you the fluffy pancakes of your dreams.
If you are cooking on a stove top, turn the heat to just over medium. And if you use an electric griddle, 350F is perfect.
